The Wine

This Vin Santo is crafted in the picturesque San Gimignano region of Tuscany. It is composed of 92% Trebbiano and 8% Malvasia grapes. The wine showcases apricot and floral aromas with a subtle touch of honey. The palate mirrors the nose, offering a harmonious sweetness and a prolonged finish. This Italian dessert wine features a refined, balanced taste with hints of almond and dried flowers. The vinification process involves drying the grapes until December, followed by a minimum of four years aging in 100-litre oak casks. It's not overtly sweet, so matches well with a variety of pastries, biscotti or even Tiramisu as pictured below at Fabbrica!

About the Wine Maker

Vasco Cetti, alongside his wife Graziella Cappelli and their son David, owns and operates the stunning 50-hectare Poderi del Paradiso farm, situated near the picturesque town of San Gimignano. Although Vasco began practicing viticulture in the 1970s, his family, with a history in surgery, has been in possession of these vineyards since the medieval period.
