The Wine
Not your ordinary Sancerre - 100% Sauvignon Blanc grown on Kimmeridgian soil (like Chablis), wild yeast fermented and aged on the lees in a combination of steel tank and amphora for 6-8 months - Citrus, grapefruit, crisp green apple, and wildflowers resonant from the glass. A penetrating and comforting minerality lingers through to the finish. This is class Sancerre in a glass!

About the Wine Maker 
Domaine Thomas is run by tenth generation of the family, Julien and Justine (pictured below), located at Verdigny. They farm bio-dynamically and uniquely for the region they employ wild yeast fermentation which gives their Sancerre a kaleidescope of characters - flint, mineral, its racy, precise, rocky, fresh and a flavoursome character at a moderate alcohol. Sancerre should be, all terroir, unadulterated by oak and somewhat Chablis-esque!
