The Wine

The Ca’Montini Pinot Grigio originates from a single vineyard named “Terre di Valfredda,” which translates to 'cold valley,' located in Ala, Trentino. The vineyard employs the traditional pergola trellising system, densely populated with 3500 vines per hectare, established in 1998. This system is primarily used for white grapes to shield them from excessive sunlight and potential sunburn while also promoting airflow to deter disease and provide a cooling effect.

Upon arrival at the winery, the fruit is meticulously hand-sorted, cooled, and gently pressed as whole bunches into tanks. The juice is then fermented with indigenous yeast within stainless steel tanks and avoids malolactic fermentation to preserve the fruit's freshness and purity.

The bouquet presents delightful aromas of white peach and green pear, complemented by a hint of quartz and citrus peel.

The palate experiences a vibrant, crunchy acidity with notes of white peach, green pear, and peach blossoms. A persistent saline minerality captivates the palate, stimulating interest. The wine exhibits a substantial mid-palate weight that harmonizes the crisp acidity and saline notes. Overall, it boasts remarkable persistence, encapsulating a beautifully handcrafted Pinot Grigio with intricate layers of complexity.

About the Wine Maker

Planted in 1990, the Terre di Valfredda vineyard is naturally protected from the elements by the surrounding Dolomites. This highly prized vineyard is made up of four small plots of clay and limestone soil that form a cone shape, which the locals in the area call 
Valfredda or "cold valley."  
 
As one of Italy's top winemakers, Riccardo Cotarella's experience with Pinot Grigio comes from twelve years of study and  experimentation conducted in vineyards as well as in the cellar at the University of Viterbo where he is Professor of Oenology and 
Viticulture. During this time Cotarella has received many offers of collaboration to produce Pinot Grigio with numerous Italian wineries, but in the end elected to work with Ca' Montini on his first Trentino effort.
