The Wine

This classic Dry Apera was sourced from the long standing Apera solera systems at Seppeltsfield. The blend consists of equal parts of DP116 (Aged Flor Apera) and DP117 (Dry Flor Apera). These wines start their maturation as a fortified neutral dry white, aged under flor yeast. This imparts a fresh aldehyde aromaticity; further maturation is oxidative and this imparts a nutty complexity.
