The Wine

The Clos des Renardes is a newly acquired vineyard, situated in an excellent terroir. Crafted exclusively from Pinot Noir, the wine is enriched by the clay and limestone soils of the vineyard.

Fanny allowed the juice to macerate in stainless steel tanks for five days before transferring it to aged barrels. There, it underwent fermentation for fifteen days and was matured over twelve months.

This wine is beautifully elegant and is super accessible now, yet it promises to improve with one or two years of cellaring. Striking new label design too!

About the Wine Maker

In 2005, at just 25 years old, Fanny Sabre became part of the family estate. She received an invaluable education from her mentor, Philippe Pacalet, the former manager of the renowned Domaine Prieuré Roch in Vosne Romanée. The biodynamic philosophy soon became a guiding principle of everyday life at the estate.

The estate boasts five prestigious appellations: Beaune, Savigny-les-Beaune, Meursault, Volnay, and Pommard. Each is cultivated following biodynamic agricultural principles. Visiting the estate is essential to appreciate the immense work done in the vineyards: the grass-rich soils are meticulously tended, and green harvesting helps regulate yields.

Regarding vinification, white wines are sensibly aged on their lees in barrels, while red wines are consistently vinified with whole bunches. True to his approach, vinification is performed without sulfur or only with minimal amounts.

Fanny is on a singular mission: to craft pure, unadulterated wines. She aims to produce wines that age gracefully and thrill the hearts of wine enthusiasts.
