Inkwell Pressure Drop Cabernet Sauvignon is made the way we grew up loving it - intensely flavoured without the weight found in more common higher alcohol styles. Hand picked, fermented wild and cellared in first class French oak barrels for 18 months prior to bottling. Inkwell’s 2020 estate grown single vineyard Cabernet was grown on sandy loam over Pirramimma Sandstone geological formation. Minimum effective SO2 added. INKWELL

Since 2005 we have fermented our wines naturally using indigenous yeasts and without making additions or corrections to produce age-worthy wines that retain natural freshness and intensity.

Inkwell, under the impeccable guidance of Dudley and Dr Irina Santiago-Brown (contributor to the Oxford Companion to Wine 6th edition), is producing what many consider ‘modern McLaren Vale wines’: estate-only fruit with no additions other than minimal so2 at bottling, made from meticulously, organically grown fruit, picked early.
