The Wine

The gentian root liqueur by Alfred Labounoux was first crafted in his family's distillery in the late 19th century. This novel aperitif was named after the village of Salers, where the gentian plant thrives wild on the volcanic slopes of Puy Mary.

About the Wine Maker

The 'Great Yellow Gentian' requires approximately twenty years to mature before harvest and blooms biennially. Following the harvest of the root, it is immersed in neutral alcohol for several weeks to macerate. Following this period, the roots undergo distillation to enhance their flavor. Finally, both the infusion and the distillate are aged in Limousin oak barrels for two years, which mitigates the inherent bitterness of the root.
