The Wine
Located on the slope of Chassey-le-Camp (the village facing Santenay) the vineyards are pruned to Guyot Poussard and Cordon Royat. Plantation density is 10,000 vines/hectare, with massal selection replantings. Shallow plowing under the rows, with some grass growth to balance soil microbiology.
5% whole cluster, gravity transfer to concrete tank. Indigenous yeast alcoholic fermentation with one daily punch-down until mid-fermentation and one gentle daily pump-over until the end of maceration. 12 months' aging in oak barrel (no new oak), followed by 5 months in tank. SO2 not added until after malo and at bottling. Bottled on a root day, waning moon.
...comes from west-facing slopes. It has a pretty bouquet with raspberry and wild strawberry scents very pure. The palate is medium-bodied with crunchy red fruit and fine tannins with a slightly leafy finish. This is delightful. Vinous, Neal Martin
