Animale Chardonnay 2023
The Wine
The youthful and vibrant Yarra Chardonnay boasts a creamy heart. Originating from the esteemed Highbow vineyard, it features venerable I10V1 and P58 clones. Nestled on a south-facing incline, the vineyard is composed of light-brown duplex clay loams within the Dixons Creek area. Harvested prematurely to capture a citrus essence, the wine exudes lightness, freshness, and a pronounced acidity. The pressing was done straight into a blend of seasoned French puncheons and hogsheads, retaining all solids.
The natural fermentation process peaked at 23 degrees Celsius, culminating in sugar dryness after 24 days. Subsequently, the wine was sealed, subjected to a mild chill, and remained unsulphured until a fortnight prior to bottling, eschewing both fining and filtration.

He takes fruit from the Upper and Lower parts of the Yarra Valley for this project, aiming to express the purity of the Yarra through these small batch wines.
