Envinate Vinos Mediterraineos Albahra 2015
Envínate (Wine Yourself) is the brainchild of 4 friends, winemakers Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez.  This gang of 4 formed back in 2005 while studying enology at the University of Miguel Hernandez in Alicante.  Upon graduation, they formed a winemaking consultancy, which evolved into Envínate, a project that focuses on exploring distinctive parcels mainly in the Atlantic-inflected  regions of Ribeira Sacra and the Canary Islands.  Their collective aim is to make profoundly pure and authentic wines that express the terruño of each parcel in a clear and concise manner.  To this end, no chemicals are used in any of the Envínate vineyards, all parcels are picked by hand, the grapes are foot-trodden, and the wines are fermented exclusively with wild yeasts, with a varying proportion of whole grape clusters included. For aging, the wines are raised in old barrels and sulfur is only added at bottling, if needed. The results are some of the most exciting and honest wines being produced in Spain today.

This wine is sourced from a single 30 year old vineyard that is divided into 3 parcels at 800 meters elevation in the Almansa region, around the town of Albacete.  The grape is Garnacha Tintorera (or Alicante Bouchet), and the soils are chalky, clay-calcareous.  The wine is wild yeast fermented with 50% whole grape clusters in 4500 litre cement vats, with soft pigeage and a short maceration of 7 days; then raised in cement for 8 months.  The result is a remarkably fresh wine with earthy dark fruit and spice – a great wine to pair with savoury dishes, like roasted meats, sausages, mushrooms, and rice dishes, like paella or arroz negro. 580 cases produced

Hakushu Single Malt Distillers Reserve Japanese Whisky

From the Hakushu distillery in the foothills of Mount Kaikomagatake comes their Distiller's Reserve single malt whisky, a no-age-statement expression, that captures the smoky, herbaceous characteristics of their whiskies. Both lightly-peated and heavily-peated malts were used for this complex and deeply enjoyable whisky. One of two Spring 2014 release from Suntory.

Peppermint, pine and pleasant grassy notes along with cucumber and melon on the nose. Flavours of sweet mint and citrus zest and a waft of smoke appears during the long finish.

Hibiki 'Japanese Harmony' Masters Select Suntory Whisky

Launched in March 2015, this is yet another NAS addition to Suntory's sought after "Hibiki" series. More exclusive than the standard Harmony bottling, it is the first Hibiki created for the global duty free market. A blend of more than ten malt and grain whiskies which are aged in five different types of casks from the Yamazaki, Hakushu and Chita distilleries, Suntory chief blender Shinji Fukuyo was involved in its creation, while production is overseen by the third generation master blender and great-grandson of Suntory founder, Shingo Torii. Beautifully presented in the brand's trademark 24-faceted bottle representing the Japanese seasons.

Bright brass colour shows impeccable purity. Initial pass finds subdued, resinous, woody aromas. Remains frustratingly shy over five to six minutes. Extended air contact finally amplifies the bouquet beyond mediocre, releasing attractive fragrances of dusty cocoa, dates, oak shavings, cinnamon and pepper. Light entry. Medium bodied mid palate expands the flavour range with dried fruits, hazelnut, light cocoa and peppery warmth. Finish finds wood spice and wood shavings followed by a subtle vanilla and honey undercurrent carrying the aftertaste. Improves over time, ending up richer and more robust than most Japanese blends at its level.

Limeburners Peated Western Australian Single Malt Whisky
Albany was the birthplace of Western Australia's first Single Malt Whisky distillery. Here, we've been distilling handmade Australian Whisky and spirits for 11 years on the water's edge. 

This whisky has been made using a peat from near the 'Valley of the Giants'. Matured in an ex-Bourbon American Oak cask, Barrel M215 exhibits spice and floral aromas when neat, a splash of water unleashes malted barley and intense complex smoky aromas.

Limeburners Port Cask Western Australian Single Malt Whisky
Albany was the birthplace of Western Australia's first Single Malt Whisky distillery. Here, we've been distilling handmade Australian Whisky and spirits for 11 years on the water's edge.

Limeburners Single Malt Whisky is matured in a 200 litre American Bourbon Cask and finished in an Australian Port cask. Exhibiting spice and fruit aromas when neat, a splash of water unleashes malted barley, aromas of vanilla and port with hints of honey, raisins and warm spices.

Limeburners Sherry Cask Western Australian Single Malt Whisky
Albany was the birthplace of Western Australia's first Single Malt Whisky distillery. Here, we've been distilling handmade Australian Whisky and spirits for 11 years on the water's edge. 

This complex and elegant single malt whisky is distilled in our traditional small batch copper pot stills from local barley. This whisky is matured in second fill bourbon barrels and finished in a very old small sherry cask. Exhibiting spice and fruit aromas when neat, a splash of water unleashes malted barley, aromas of sherry and vanilla with hints of honey, raisins and buttery caramel. Limeburners Sherry is a medium coloured whisky with intense and complex flavours, a full taste and a smooth finish.

Nikka Red Pure Malt Whisky
After a long absence from the Australian market, we've finally managed to secure some world class Japanese whiskies from the Nikka distillery, Japan’s second largest whisky producer after Suntory. Now owned by the brewer Asahi, the company was originally set up by Masataka Taketsuru, who built Yoichi distillery in 1934, having previously spent two years studying the art of distilling in Scotland. (He also developed the now famous 'Yamazaki' distillery in Kyoto for Suntory which he managed for ten years). Nikka's range of blended, pure malt and single malt whiskies will be exciting new discoveries for any Whisky enthusiast.

Bright, deep gold. Nosing hints at bubblegum, toasted cereals and later orange peel - even dried mango? Sedate entry builds into a juicy, fruity malt surge followed by a fresh, mildly peppery and lozenge like finish. Crisp oak rounds the whisky off in perfect balance.

Nikka 'Taketsuru Pure Malt' Japanese Whisky
Nikka Pure Malt Taketsuru Japanese Whisky was released in 2014 and this Taketsuru bottling is a blend of malts aged 10 years on average in different types of oak casks. A high percentage of Miyagikyo malt gives a fresh fruity character, joined by mature aromas from an important sherry cask influence.

This is a Japanese issue bottle aimed at connoisseurs and collectors.

Nino Negri, Sassella 'Le Tense' ( Valtellina) 2013

Nebbiolo grape : These vines are planted in some of the best crus in the Sassella subzone: Minè, Chiesa Sassella, Grigioni-Cà Binaca. The vines are trained with the arched variant of the Guyot system (3500 vines/hectare), on poor, stony, shallow soil, tending towards dryness, at a height of 400-450 metres. 6 tonnes of grapes were produced per hectare. A full flavour, smooth but well sustained, very tasty with great elegance and harmony. Pleasant undertones of prunes and persistent spices. 

Yamazaki Single Malt Distillers Reserve Whisky
Yamazaki Whisky is Suntory's flagship single malt,multi-layered with fruit and Mizunara aromas.

Mild with fresh fruit. Gold in colour with aromas of strawberry, cherry, Mizunara (Japanese oak) The palate shows raspberry, white peach, touch of coconut. Finishing with sweet vanilla and a hint of cinnamon.
